🥕 Carrot Cake Bliss Balls 🥕
No bake • Naturally sweet • Perfect snack energy
If you love carrot cake but want something quick, wholesome and fridge-friendly — these are it 🤍
They take minutes to make and are ideal for snacks, post-workout fuel or a healthier sweet treat.
✨ Ingredients (makes ~10 balls)
• 70g pecans
• 60g walnuts
• 50g desiccated coconut (plus extra for rolling)
• 75g pitted dates
• 80g carrot, chopped
• ¼ tsp ground cinnamon
• ¼ tsp ground nutmeg
• ¼ tsp ground ginger
Method
1. Add all ingredients to a blender or food processor.
Blend for 10–15 seconds (medium-high speed) until the mixture comes together.
2. Place extra desiccated coconut onto a plate.
3. Roll tablespoons of the mixture into balls (you should get about 10).
4. Roll each ball in coconut to coat.
5. Chill in the fridge for at least 30 minutes before serving.
