This course covers all large Game meat and hygiene leglasation relating to Deer.

( your opportunity to obtain knowledge in gralloching and organ examination ensuring the meat from the animal is fit to enter food chain and is fit for human consumption)

Course comprises of following.
Hands on course.

Full carcase inspection and gralloch

Inspection of all organs and lymph nodes

Checking all above for any notifiable diseases.
Full skinning head removal etc
Cutting of meat ,burger and sausage making

Classroom powerpoint presentation
All attending must undertake 20 question multiple choice exam paper.
All successful attendees will receive a UK Rural Skills accredated certificate .

This course covers legalisation Deer laws
Power point theory carcase,organ and lymph node detail.
Full gun handling and safety walk.
The safety walk is held in forest land with 14 silhouettes of Deer appropriately placed to provide learning and safe shooting criteria .
Shooting on psni approved range from bench and on quad sticks.
Guns and ammunition provided on the day.

Commencing 10.00a.m

This course will include full gralloch of Deer inspection of all organs and lymph nodes skinning and butchery demonstration.
Full butchery demonstration including sausage and burger making.
This course is approved by Food Standards Agency Northern Ireland and will be accredated by recognised awarding body.
Certificates will be awarded to all who successfully obtain exam pass.

All attending will undertake a multiple choice exam paper.
This accredated qualifacation enables the holder to inspect Meat check for all notifiable disease and if all is satisfactory to food standard agency regulations to allow Meat to enter the food chain.
Full trained hunter status obtained if person has completed Deer Stalking Course

The course will be held Close to Antrim Town on approved premises.
