My ABSOLUTE favourite healthy treat…. 🫶🏻

PISTACHIO NUT BALLS…. 💥

Ingredients 🧑‍🍳

A small cup of soaked dates (liquid strained)
A cup of pistachio nuts
2 tbsps of coconut oil (melted)
2 tbsps of pistachio butter (raw unsweetened)
1 tbsp of maple syrup
1 cup of desiccated coconut
1/2 cup almond flour or flaked almonds

Almond flour or pistachio flour to roll the balls in.

The measurements are estimated as I ‘freestyle’ a lot of my recipes.

Put all ingredients in a blender and observe the consistency. All wet/dry ingredients as required to be able to roll into balls. Can be cooled in the fridge before rolling.
Roll in almond flour or chopped pistachios for easy storage. Keep in the fridge.

HEALTHY NUTELLA TRUFFLES 🌰 🍫

You will need:
1 cup dates
1/2 cup hazelnuts
4 tbsp cacao powder
1 tsp vanilla extract

Coconut oil (optional) if dates are too dry and mixture isn’t sticking. I used 2 tbsp in my recipe. Add as required.

Add all ingredients in a food processor. Blend. Add coconut oil if required.

Chill for 20 minutes.

Roll into balls.

Roll in blended hazelnuts or almond flour to prevent sticking.

Store in the fridge.

Enjoy!!

I am back…. Soooo grateful to be feeling well again. 🙏

I cried…yes I know it may sound ridiculous …. But I have never felt no energy before and the body that ached like that. So I cried before sleep because I was scared about how I would feel the next day. It was a beautiful reminder of what matters above anything else….our HEALTH. ✨

Every setback is a kick up the a… to look after the body I was given. To move it, stretch it, use food as medicine and fuel, look after the mind…. It all MATTERS ❗️

Because the ‘empty cup’ feeling is one place I won’t be returning to any time soon.
