We are here for the snack attacks… and this "Cookie Dough" Snack is just what we had in mind. 🤘
2 cans of chickpeas
1/2 cup reduced-fat peanut butter
1/2 cup maple syrup
1 tsp vanilla bean paste or vanilla extract
1/2 cup dark chocolate chips
1-2 tsp salt
1. Rinse chickpeas and place into a food processor or blender.
2. Add in peanut butter, maple syrup, salt, and vanilla bean paste into blender. Mix well until the mixture comes out into a smooth consistency (you may need to use a spatula to scrape around the sides and stir).
3. Scoop out of blender into a mixing bowl. Pour in the chocolate chips and mix well to make sure it spreads evenly.
4. Store in fridge for a maximum of 4 days — if you don’t consume it immediately, just separate into single serving sizes and freeze!
