Like a fluffy and delicious creamy cake of pancakes; it’s my best yet!

Made with zero added protein powder these pancakes pack in a wonderful 30g of protein plus 60g of carb goodness which obviously you can boost with your choice of toppings and sides!

Recipe…

100g quark
1medium egg
Splash of coconut water / lemon juice / lime juice whatever you have to add a little moisture and flavour kick!

Mix together the wet ingredients and then add in 30g flour of choice plus 1tsp of baking powder. Here you can also add poppy seeds, shredded coconut etc, whatever fits the flavours that you’re going for.

Mix together into a slightly runny bit thick batter.

Heat a bit of oil in the pan on medium heat and add your batter (roughly 2tbsps per serving makes 5 golden fluffy pancakes)

Cook for a few minutes on each side and then stack and top. For a flavour and cakey boost I added a thin layer of quark between each and then topped with mango, blueberries, raspberries, kiwi, seeded peanut butter from and a bit of coconut resulting in a taste and texture sensation! 😋

So good that I’m now going to make them again for afternoon snack time! Enjoy and let me know if you try them!

It doesn’t look like much but this is without a doubt the best porridge I have ever made! Sweet but salty, crunchy but creamy and bursting with flavour; so satisfying but also so sad when it’s all gone!

Poach your pear first by boiling in water for 10 minutes with a small amount of sugar

60g oats
15g cappuccino protein powder
5g chia seeds
Half an apple chopped up small
Even microwaved this turns out so creamy! 2 mins, leave to stand for 1 min, stir and then cook for another 1.5mins

Top with your pear, 50g banana, chopped pecans, a drizzle of honey, a dusting of cinnamon, a delicate dollop of peanut butter and a sprinkling of salt! 🤌

It might not look super pretty but beauty is always on the inside 😜

Keeping things very real on day 18 with a travel day overnight oats breakfast 🥣

30g oats
60g quark
10g chia seeds
150ml coconut milk
Vanilla essence
Mix together and leave overnight

Top with
50g banana
Small kiwi
15g seed mix peanut butter

This picture perfect porridge is a delicious winter ride fuel for day 17!

Big ride = big bowl! 60g oats plus 120ml of water / oat milk mix. 10g soy protein powder, cinnamon and nutmeg. Cook your porridge until thick and creamy and top with your favourite fruits.
Here I have 50g banana, 75g kiwi, 50g blueberries, 50g apple (another 50g eaten whilst preparing 😋) and some pomegranate seeds.

Personally I love a little bit of everything for a good variety of fruits and nutrients and a few steps closer to getting my 30 different sources of fruit and veg per week! 🍇

Sprinkle with a bit more cinnamon (it’s Christmas after all) and a dollop of peanut butter. Enjoy with a coffee and get ready to roll! 🚴‍♀️

Celebrating Day 14 of fitness and food festivities with wonderful waffles!

A great alternative to pancakes these waffles give a crunchy and delicious base for your fruity nut butter delights!

Recipe
80ml egg whites
50g cottage cheese
10g protein powder (salted caramel or coconut for the win!)
30g oats
Dash of bicarbonate of soda and baking powder

Method
Whip the egg whites first separately, this gives the light base and for the fluffy waffles.
Mix the rest of the ingredients together separately and then fold them gently into the egg whites, trapping as much air as possible.

Try to avoid letting the mixture sit for very long and pour the mixture into the hot waffle maker, this should make approx 3 waffles, careful not to add too much mixture to each waffle.

Then serve with your favourite toppings and enjoy.

Day 13 delivers us some spicey prawns on top of crispy soy aubergines and oyster mushrooms and creamy spinach pasta! Dishes like this make me wish my presentation was better because it was so yummy!

Chopped your aubergine and mushrooms, season and soak in soy sauce before throwing them into the air fryer or oven for 15 mins. Give them a couple of turns to crisp them evenly.

Marinade your prawns in soy sauce and paprika with a little bit of chilli oil before moving on to the pasta.

While your pasta is cooking, wilt your spinach in water or a quick zap in the microwave, then add toapprox 70g quark and blitz together. Add a squeeze of lemon here!

When your pasta and your aubergines have 5 minutes left, take your prawns and grill over a medium heat for a couple of minutes either side.

When the pasta is cooked, drain and mix with your spinach quark sauce, you might want to add a bit of pasta water here if your quark is thick and stiff together over a very low heat for 2 minutes.

Serve the pasta, add your crispy aubergines and mushrooms on top and then the prawns to finish!

Nutritious, delicious and all done in under 20 mins!

Oh the lazy, I mean, efficient girl’s guide to PB&J loaded fluffy pancakes… seriously though, these are a delicious, nutritious, quick and easy way to make a good looking breakfast! 🥞

75ml egg white
50g cottage cheese
10g soy protein powder
30g oats
Sprinkle of bicarbonate of soda and baking powder
Blend together into a thick batter

Cook on a medium heat for 2-3 minutes each side!

Serve and top with 150g of defrosted mixed berries and drizzle with 15g of delicious mixed nutty butter. Enjoy!!

Dreaming of a mine pie for day 5!

Tis the season for a mince pie, unless like me, you’re a Brit abroad and can’t get hold of a delicious warm mince pie fresh out of the oven with a dollop of brandy butter or cream! However, I can and now you can, make thee mince pie inspired flapjack bars.

Ingredients…

100g Raisins / sultanas etc
100g Dates
150g Apple
150g banana
200g oats
Cinnamon
Nutmeg
30ml coconut oil
20g shredded coconut

Method to the magic

Soak the raisins in warm water and cinnamon for 15 minutes or so to add a bit of additional flavour and moisture into them. (Blackberries also work really well here if you can get some fresh ones!)

Mash or mix the bananas into a paste

Chop dates and apple into small pieces and add to the mix plus cinnamon and nutmeg to taste

Pour in the coconut oil and stir together and then add the raisins plus the remaining water

Fold in the oats and then final add the shredded coconut bits

Spread evenly into a baking dish and bake at 180 for approx 10-12 minutes

Remove from oven when still a bit soft and squishy as it will set as it cools!

Slice up and enjoy a little taste of Christmas! 🎅

A picture perfect purple porridge for day 4 💜

50g oats
10g vanilla protein powder
50ml water
50ml soy / oat milk
100g frozen blueberries

Either heat in a pan or stick in the microwave (not the same but great if you’re tight on time!) for 2m30s

Stir and make sure the blueberries are fully mixed into the porridge mix. Top with half banana, kiwi, desiccated coconut and a drizzle of peanut butter.

Balanced flavours, balanced nutrition and bloody delicious!
