Not all BBQ cuts are created equal, and knowing what you are cooking makes a huge difference on the grill.

Keep it simple with salt and pepper, then give it time. Let the seasoning sit until the surface looks dry and tacky, not wet. That step is what helps lock in smoke and build that deep, crusty bark everyone’s chasing.

Once it’s on the smoker, don’t chase the clock. Watch the bark, feel the tenderness, and trust the cook.

Cookie crusted cheesecake, but make it competition level.

For the American Royal World Series of BBQ, this dessert was built from the ground up and tested with everything from brownie crust to graham cracker to vanilla cake. But one option kept coming out on top: a chocolate chip cookie crust.

After experimenting with different ideas, the final version came together using chocolate chunk toffee cookie dough from Confetti Sweets. The result was rich, buttery, and the perfect base for a vanilla cheesecake.

It was finished with a butter caramel honey sauce that tied everything together and took it to another level.
