Fried Rice with no rice and no eggs!

This is literally the first time I made fried "rice" with no eggs.
I think the fact that I kept the dish really dry and add enough meat did the trick! It tasted pretty awesome ๐Ÿ™‚

The hardest part about not eating rice, is actually not able to eat fried rice. I just love the eggs, the green onions and the BBQ pork all mixed up with dried fluffy rice. It feels luxurious! It smells amazing!

Ever since I went Keto/Low Carb, I ended my love relation with rice. Although cauliflower rice fits my diet, the texture can get too mushy. The worst thing about pure cauliflower rice is, when it gets old, it smell so bad!

What save the day was when Chef Saman came up with this Persian Keto Quinoa + Cauliflower rice. Mixing a small amount of quinoa into the cauliflower rice makes this rice bouncy, and crunchy. It is a great rice base for ANY fried rice or just eat on its own. A "must have" in any low carb/keto fridge! Check out the recipe for the secret ingredient. And finally, you can have bouncy, fluffy taste rice again. When I first ate this, it was so good... I wanted to cry. Try this if you miss your rice, and let us know how it goes.

๏ถ 1 large bunch Fresh Dill
๏ถ 2 cups Mixed Colour Quinoa https://amzn.to/3fu8FqA
๏ถ 2 cups Riced Cauliflower (pre-cut, frozen ok)
๏ถ 1 tbsp Fine Himalayan Pink Salt. https://amzn.to/2Wbt9g3
๏ถ 2 heaping tbsp Organic Coconut Oil
(Costco is cheaper for this brand)
๏ถ 4 cups Cold Water

๐„๐ช๐ฎ๐ข๐ฉ๐ฆ๐ž๐ง๐ญ:
๏ถ Instant pot
๏ถ Rice Spatula
๏ถ Sharp knife
๏ถ Cutting board

๐Œ๐ž๐ญ๐ก๐จ๐:
1) Finely chop Dill ( to about 1.5 cups)
2) Put everything (except dill and coconut oil) in instant pot
3) Spread coconut oil on top in small pieces (about 8 -10)
4) Set instant pot on โ€œRiceโ€ cook on โ€œsealedโ€ (i.e. pressure cook)
5) When ready, release pressure
6) Open lid, resist the temptation to overmix
7) Add the dill on top and gently mix in with a rice spatula by doing as few fluffing motion as you can (kind of like folding into frothed egg white, but even gentler)
8) Enjoy!
9) This can be saved in the fridge and good for 5 days
