We've all been there... you wake up, workout, and run out of time to make a healthy breakfast before work. Instead of reaching for a quick, unhealthy, grab-and-go option, try these egg bites from Love & Lemons instead! You can make them ahead of time and just reheat them in the mornings.
Here’s what you need:
🫒 Extra virgin olive oil (for the pan)
🥚 6 large eggs
🧀 ¾ cup cottage cheese
🧂 Sea salt & black pepper
🌿 3 cups fresh spinach
🌶️ ½ cup roasted red pepper (diced)
🌱 ½ cup green onion (chopped)
How to make them:
1️⃣ Preheat the oven to 350°F & grease your muffin tin with olive oil.
2️⃣ Blend eggs, cottage cheese, salt & pepper until smooth.
3️⃣ Steam spinach till wilted, squeeze out excess water, then chop.
4️⃣ Mix spinach, red pepper & green onion. Measure ¼ cup of the mixture and set aside.
5️⃣ Divide the rest of the veggies into muffin cups. Pour 1/4 cup of the egg mixture over top.
6️⃣ Divide any remaining egg mixture evenly among the muffin cups. Sprinkle reserved veggies on top & bake 18–22 min.
7️⃣ Cool for 5 mins, pop out, and enjoy!
💡Recipe tips: Egg bites keep well in an airtight container in the fridge for up to 3 days. You can also freeze them (for up to 3 months), unthaw overnight in the fridge, and reheat them in the morning.
