Deconstructed chicken & Leek 🥧

Puff pastry cut into squares-per serve
Whisked egg to brush pastry
One full leek cut finely
Mushrooms
Chicken thigh- I use 2 packs (feeding Men 🫣)
Thicken cream- I use full container
1 Tbsp Chicken bone broth or chicken stock
Thyme
1Tbsp garlic
Salt & pepper
Oil or butter to cook your leeks & chicken
Cook leek & Mushrooms till soft, add your garlic for around 1min then transfer mixture to a bowl while you cook your chicken thigh.
Once chicken is cooked return leek and mushroom mixture back into your pan. Add your thicken cream bone broth salt and pepper. Low heat to thicken (may need to add cornflour to help thicken it up)
While the above is happening, place your cut pastry squares bushes with egg wash and sprinkle of salt to the oven till crispy.
Spoon pie filling into small bowls and top with your pastry lids
