Great turnout for Transplant Australia’s first Walk and Talk in Townsville at Anderson Park Botanical Gardens. Lovely relaxing, catch up in nature today: 9am Sunday, 28 June, 2026.

Next one will be same location and time but on Sunday 26 July, to celebrate the start of Donate Life week.

We brought our own drinks with a plate to share. We went for a short 20min walk, then back to the table for more chatting in between food and drink.

Thank you everyone for sharing your experiences. Great way of feeling not alone on our various transplant journeys.🥳

Thank you Transplant Australia for finally having the chance to bring your Sports & Community Camp to Townsville in 2026 after your successful 2024 grant application.

Huge thank you to Emmy and Angela for your persistence and dedication for us.

As a kidney transplant recipient these events show we’re not alone. That likeminded people understand our experiences; waiting on the transplant wait list, dialysis and finally to be lucky enough to transplant before it’s too late.

It was wonderful meeting the amazing renal surgeons and their staff who chose the Townsville Renal Unit to save lives.

It was wonderful chatting to those and their families at different stages of their transplant journey.

Oat Pancakes
Ingredients
1 cup oats
1 eggs
1 cup milk
Pinch salt (optional)

Topping options
Maple syrup
Yoghurt
Nuts, seeds
Strawberries, blueberries

Method
1. Beats eggs. Add milk while mixing.
2. Add mixture to oats. Mix well
3. Let soak 5-10min
4. Spoon mixture into medium heat pan.
5. Turn pancake when sides lift off pan.
6. Add your toppings. Enjoy.

Requested regularly as my family favourite dish to bring for family gatherings.
Sausage (Beef & Veggies) Rolls
Ingredients:
500g minced beef (or other)
500g mixed veggies
3 heaped tbsp Mingles Bagels Everything seasoning
1 tbsp Vegeta
3 tbsp tomato sauce
3 tbsp bbq sauce
3 sheets puff pastry

Method:
1. Preheat oven 180C moderate oven.
2. Mix all ingredients well (with spoon or by hand) - except pastry
3. Split mixture into thirds.
4. Spoon third parts onto half of each pastry - 2cm off side edge.
5. Fold top half over edge and tuck under.
6. Brush top lightly with water & sprinkle with a little seasoning.
7. Cut to size (half, quarters or sixths)
8. Cook 30-40min until golden brown.

** I prepared this overnight ready for preheated oven next morning. Worked well.

Vegetable Potato Base Bake
5 medium potatoes halved (or 3 large cut thirds for base)
6 eggs beaten (with 2/3cup water or milk)
2 cups veggies and season min 2 full tbsps favourite seasoning (eg., Mingles Garlic & Dill etc.,)
3/4 cup grated cheese

Method
1. Preheat oven 180C moderate.
2. Bake cut potatoes 30-40minutes to squash slightly for base.
3. Add seasoned veggies. Salt, pepper or Vegeta.
4. Pour egg mix.
5. Top with cheese.
6. Bake for 30min covered with baking paper & alfoil and further 20 min uncovered - until cooked. Test with skewer.
7. Slice when cooler.
