βοΈ Honey-Sesame Herbed Haloumi βοΈ
- 1 sweet potato cut into small chunks
- 1 capsicum cut into small chunks
- 1 zucchini cut into small chunks
- 1 lemon zested and cut into quarters
- 1 bunch of oregano leaves picked
- haloumi sliced (desired thickness)
- 1 tsp garlic powder
- 1 tsp herb powder
- 3/4 cup vegetable stock
- 1/2 cup cous cous
- 1 Tbsp honey
- 1 Tbsp sesame seeds
- 1 large handful of baby spinach

- Preheat oven to 220Β° fanforced
- Place sweet potato, zucchini and capsicum on a tray, drizzle over olive oil and season with salt and pepper bake until tender (20/25 minutes)
- pat dry haloumi and season with garlic and herb powders
- In a bowl combine lemon zest, squeeze of lemon and a drizzle of olive oil
- Place stock in a pot and bring to the boil, add cous cous stir to combine, cover with lid and remove from heat. Set aside until water absorbed, fluff with fork and set aside uncovered.
- Cook haloumi until golden brown in a pan remove from heat add honey, oregano and sesame seeds and toss
- toss veggies, spinach, lemon dressing and cous cous
- divide cous cous mixture between bowls, top with haloumi and drizzle with leftover glaze
- serve with a lemon wedge
