As a mother of two teenagers I experienced the struggle of trying to lose the baby weight. I transformed my body through hard work and established nutritious eating habits! Lazy Sunday Morning Blueberry Banana Pancakes πŸ₯ž 🫐🍌
Delicious and guilt free πŸ‘Œ

Ingredients πŸ‘©β€πŸ³
2 ripe bananas
2 eggs
1 tsp vanilla extract
3/4 cup almond meal or quick oats (I used almond meal)
1/2 cup blueberries

Mash bananas until it resembles a thick purΓ©e, combine with eggs and vanilla extract. Then mix in almond meal/oats. Fold in blueberries.

Heat a pan, I added a dollop of butter to the pan. Scoop small amount of mixture into the pan, cook about 2-3 minutes until you start to see little bubbles. Flip and cook the other side till golden brown.

Add your favourite toppings. ( syrup and Greek yogurt or coconut yogurt) πŸ˜‹

Absolutely delicious, nutty and tasty chia puddings, good enough for breakfast or as a snack πŸ˜‹
Easy to make the chia pudding the night before and assemble your favourite toppings on top.
I layered strawberries on the bottom of the glass with passion fruit, added 3tbs of chia seeds, repeated and topped off with extra passion fruit, strawberries and pistachios πŸ“

The second one is peanut butter and banana, my favourite topped off with pistachios 🍌πŸ₯œ

They feel like a bit of an indulgence but contain a lot of great nutrition πŸ‘©β€πŸ³βœ…

Perfect salad recipe for a summer’s lunch πŸ₯—

A salad doesn’t have to be boring or bland 🀀

Today’s salad includes:
Spinach, rocket, tomato, oak lettuce leaf, yellow/red capsicum, spring onion, parsley and red cabbage.
Vinaigrette: olive oil, lemon, garlic, mint salt n pepper to taste.
Assemble salad and slice up beef/ or chicken on top, drizzle with vinaigrette and enjoy πŸ˜‹

Kale and Brussel Sprout Salad with Lemon Shallot Vinaigrette πŸ‹

Crunchy, tangy, slightly sweet and full of vibrant fresh ingredients.

Slice thin Brussel sprouts
Thinly slice kale
Grate 1 carrot
1 tps grated Parmesan
Add can of chickpeas (optional) for added protein combine shredded chicken.

For the dressing:
Chop shallots
1 tps mustard (your favourite)
Zest and juice of 1 lemon
1 tps honey
Drizzle olive oil and season with salt and pepper. Whisk to combine and pour the dressing into the salad and toss well. πŸ˜‹

Rocket Salad with Black Rice
In a large bowl add rocket, yellow capsicum, tomato’s, spring onion and 1 clove of garlic.
Prepare a vinegary dressing and add the rice to the salad mix toss all together and season with salt n’ pepper.

Black rice is high in fibre, good for your digestive system and keeps you satiated.
Good source of plant protein and rich in antioxidants.

I’m sure most of us have a few kilos we want to shed after the lockdown ended πŸ™‹β€β™€οΈπŸ™‹πŸ»

Start by changing the habits we developed over the last few months. Replace with healthy nutritious whole foods πŸ₯¬πŸ₯’πŸ₯‘πŸ₯πŸ 

This is a chopped quinoa salad topped with chicken tenderloin πŸ˜‹
Add whatever suits your palette, I choose spring onion, capsicum, olives, tomato, kale, corn and drizzled with a vinaigrette or a squeeze of lemon.

Quinoa is gluten free, high in protein and one of the few plant foods that contain all nine essential amino acids βœ…
