We might come back to homeschooling for an hour this afternoon. For now it’s some board games then a walk outside to save the tears today.
Sending love to everyone who has DM’d me that they are also struggling, this is hard and it so ok to just stop altogether or just give yourself a break. We are not teachers and can’t expect to on top of cooking 300 meals a week and cleaning and being stuck inside, working, looking after toddles and teach young children things they have never seen before. So be kind to yourself take a break, sending positive calming vibes ✨✨✨

Please let this be over soon πŸ˜…πŸ˜­. I love having them home but I am sorry I hate homeschooling.

It’s a Day late but better late than never!

My chewy (gluten and dairy free) Anzac Biscuit Recipe below:

150g coconut oil
90g maple syrup
160g coconut sugar

1tsp bicarbonate Sosa
1tbs boiling water

150g almond meal
100g rolled oats
90g organic desiccated coconut

Pre-heat oven to 160degrees Celsius and line two baking trays in baking paper.

In a saucepan melt coconut oil and maple syrup.

Once oil has melted add in the coconut sugar continually stirring.

Take off the heat, add in bicarb sofa and boiling water stir continuously. Set aside.

In a seperate bowl use a wooden spoon to combine oats, almond meal and coconut.

Add the contents of the saucepan and stir until well combined.

Roll into 3cm diameter balls and place on baking tray 8cm apart. They will flatten out and spread.

Place in the oven for 10mins

Open oven and swap the top and bottom trays and bake for further 6mins.

Remove from the oven and allow to cool fully before touching them.

Use a spatula to remove and enjoy!

Boss baby not letting me have dinner tonight swipe for my quick meal πŸ‘‰ tuna steak on brown rice, zucchini peas and feta (I alternate between keeping a pot of quinoa or brown rice in the fridge that I just take from all week and add to my veg/meal).

This is what I call 2 for 1 dinners:
I make gnocchi ragu with left over slow cooked lamb.

I put a Mediterranean lamb leg in the slow cooker with a jar of pasata, some rosemary, garlic and some dried porcini mushrooms (after we have half the leg the first night with roast veggies)
I agree the rest of the meat in the sauce and mix it through some gnocchi *just add Parmesan ###

Muesli cookie recipe variation (no banana or coconut oil)

50g melted cacao butter
1/4 maple syrup
1/2 cup roughly diced dried apricots
1/2 cup sultanas
1 cup) rolled oats
1/3 cup organic desiccated coconut
1/2 cup almond meal
1 egg
1/4 cup almond milk
Method.
Preheat oven to 180 degrees Celsius.

Place all ingredients in a bowl and mix with clean hands.

Shape mixture into desired sized balls, squish and place on a lined tray.

Bake for 15-18 mins

Cool before serving.
