My husband has a dream to ride around Australia with me some day...I'm still trying to feel confident riding around corners and downhill without using my brakes constantly...sharing this picture to remind myself that I am a bike-rider because I ride a bike. I don't have all the skills and stamina I need YET but I can keep learning and getting stronger.

I hope to look back on this some day and say, "you did it!"

My husband and I have been enjoying a staycay while our three kids are at camp. On our list of things to do was to have Indian takeaway and watch a movie.

I put the leftover rice in the empty Vindaloo and Butter Chicken containers to soak up the last of the sauce.

This morning I went to cook bacon and scrambled eggs and had the idea to make a Fusion Fried Rice - it was the tastiest Fried Rice I've ever had!!

Preheat 20cm frying pan.

Crack three eggs into a small jug and beat with a fork until combined. Grind salt and pepper to taste. Pour into preheated pan. Add a layer of Pizza Blend grated cheese and gently scramble. Remove to bowl.

Add diced bacon, cooking until lightly browned before adding diced red onion and red capsicum and a tablespoon of ghee. Cook until bacon is crisping up and onion and capsicum are softening.

Empty the rice/sauce combo and stir through. Roughly chop up the scrambled egg mixture and stir through.

Top with freshly coriander and serve immediately. 👌

Met my friend for lunch and a walk at Cooby Dam on Sunday - it was so beautiful and peaceful!

I am planning on going the Carnarvon Gorge Great Walk in May with another friend and I'm trying out different local trails to prepare.

If you are local to the Darling Downs and have any Ultralight Backpacking gear you want to sell/hire/or lend me, let me know! I'm in the market for nearly everything!

Made Thai Red Curry Pot Roast Chicken and it was amazing!!!

I have been super inspired by lately and experienced the joy of picking all the "green" food from our own garden! Coriander, Kaffir Lime leaves, Green beans, Basil, and Lemongrass.
