With the new sessions launching this week and knowing that at the end of Feb we will be jumping into our 6 week Unstoppable Series I’ve decided to start early to set up my healthier eating habits.

More info to come regarding the unstoppable series however if hypothetically speaking there was a LIFESTYLE or ULTIMATE nutrition option I’ll be all in for the ULTIMATE!!!!

Home cooked meal prep pictured consists of:

Baked Cauliflower (prep extra)
Steamed sweet potato (prep extra)
X2 Falafel balls (oven baked)

Super easy, healthy taco option!

X 2 cans of lentils washed
X 1 sachet of Mexican style Jackfruit

Heat together in pan for around 5 min.

Prepare cabbage or lettuce leaf cups & chop capsicum, cucumber & (chopped avocado is great too, I just wanted a lower fat option as I had eaten more than a handful of almonds earlier)

Place Mexican lentil & jackfruit mix into cabbage cups, sprinkle with chopped toppings and eat with your hands πŸ‘Œ πŸ˜‹

Newest food obsession!!!!!

Fill a pan with water, add dry mixed Italian herbs, put in cubed carrot, sweet potato, pumpkin & bok-choy or spinach, allow to simmer, soften and reduce.

Empty 2 cans of lentils & rinse well under water, then add into simmering pot of water & herbs.

Empty 1 pack of Konjac
rice into strainer & rinse under water, add to simmering pan and heat through.

Serve with a drizzle of coconut aminos πŸ‘Œ

My healthy version of risotto (not that I ever eat real risotto as that would bloat me & make me feel really sluggish)

I’m playing around with gluten free as has recently been diagnosed as celiac & a lot of research suggests most of us could do without gluten in our diets

Also about 2 weeks ago I tried a fair few chickpea based foods & it literally stuffed my digestion.

So trying to stick with simple whole foods as much as possible & low FODMAP ingredients to get back on track.

This was the last attempt for me & chickpeas to be friends.

It’s over now, lentils & tofu protein sources will remain my staples πŸ˜›

110% a morning person! πŸƒπŸ»β€β™€οΈ

Last week I had to run at 11am, 10KM was all I could think about doing and at 6km I was checking my watch for it to be over!

Today 7:30am, 18km done & I loved every bit of it.

Much of it is headspace as well.

If your head is not in it then take note, rest or lessen the load your going to do.

You will get so much more out of training if you listen to what your body is telling you it needs.

Apart from taking 3 sessions yesterday morning I didn’t do any form of direct exercise.

Instead I went for a walk to get some nutritious food for snacks & dinner, I had about 2 x 15 min power naps (whilst trying to read 😴) had a 1 hour bath in Epsom salts whilst listening to a nutrition talk and slept 7.5 hours (that’s great for me & zaya only woke once πŸ™Œ)

So not at all surprised I was so ready to run this morning.

Last week I felt like I was dragging the world behind me.

Good reminder to rest to progress πŸ‘Œ

I’m all about quick, easy & healthy food options.

My go to banana bread recipe is:

X 2 fork mashed bananas
X 2 egg whites ( I don’t love the taste of yolk πŸ€·πŸ»β€β™€οΈ but whole egg works if you like it)
X 2 scoops of salted caramel vegan protein powder (I use this instead of flour as it’s lighter, full of protein and tastes so good)
Pinch of cinnamon, nutmeg and half a teaspoon of baking powder

Mix all together and bake at about 180 degree for around 30-40 min (check mid way)

Serve with yogurt & cacao nibs πŸ‘Œ
