Everyone assumes summer is the Hunter's big season.

It's actually right now. All of July, Winter in the Hunter takes over Pokolbin. Long lunches that stretch past 4pm, barrel tastings in candlelit cellars, fireside dinners at the vineyards. The valley's most celebrated month, and most of the country hasn't caught on yet.

What you get in July that you can't get in January: cool still mornings, cellar door staff who actually have time to talk to you, and the Brokenback Ranges looking like a completely different mountain range with the vines stripped bare. No 38-degree afternoons. No jostling at the tasting bar.

Our three houses sleep up to 34 across 14 bedrooms, and mid-winter is when the Estate really earns its keep. One fireplace at the Homestead. One long kitchen where someone's always got the kettle on. One front door your whole crew walks back through after a day out among the vines.

Second stays tell you everything.

Lara Towne and her family came back to Woolshed Hill this year, and her words said it best: "Perfect house for family time with kids and grandkids. Fun in the pool, a round of golf, and tasting local wines. We will be back again."

Three generations under one roof. Grandkids in the pool from breakfast till the sun dips behind the palms. A round of pitch & putt for the ones who can't sit still. A local drop shared on the terrace once the little ones are down.

The Golf Course and Tennis Court are both quiet and everyone's moved inside.

The fireplaces in both the Manor and Homestead living rooms are doing their work now. That particular kind of warmth that makes our large group spread out across both these houses feel like a small one, gathered close on the sectional, feet tucked up, someone is still looking for what wine to have with dinner.

Hunter Valley winters have their own rhythm. Crisp mornings among the vines, long lunches that stretch into afternoons, and then this. The slow settling. Two lounge rooms to spread out in, or one fire to draw everyone back to. 🔥

There's a particular stillness to a winter night out here, when the day outside is done and the estate just holds you in. Conversations soften. No one's checking their phone, well maybe not the kids who have landed in another Homestead lounge room.

This is the part of the weekend that often no one photographs, but everyone remembers.

Our June and July weekends fill faster than most summer ones.

It surprises people every year. But the guests who come in winter almost always leave saying the same thing: why haven't we done this before?

Fog rolling over the Brokenback Ranges at 7am. The Homestead fireplace already lit. A bottle of Shiraz from a cellar door ten minutes down the road, opened slowly because there's nowhere else to be.

Winter here isn't a quieter version of summer. It's its own thing entirely. The crowds thin out, the cellar doors slow down, and the estate feels like it belongs to you and the people you brought with you.

Long lunches stretch into afternoons. Conversations stretch into evenings. Someone always ends up in the armchair closest to the fire 🔥

A family of 22 once told us they'd spent three nights across four different hotels in the Valley.

Different check-in times. Different breakfast spots. A group chat just to coordinate cars. By day two, half the family hadn't actually seen the other half.

Booking separate rooms feels like the easier path. In practice, it scatters the very people you came together to see.

One estate changes the shape of the weekend. One kitchen where someone's always pouring a coffee or opening a bottle. One long table where the kids' dinner becomes the grown-ups' long lunch becomes a late-night cheese board. One pool. One pergola. One front door everyone walks back through 🍷

The guests who stay with us across all three houses tell us the same thing afterwards. It wasn't the views or the bedrooms they remembered most. It was the morning everyone ended up in pyjamas around the island bench, still talking about last night.

Everyone told us to visit Hunter Valley in spring. We went in August instead.

Best weekend of the year. 🔥

Here's the part no one mentions: August sits just outside the July school holidays, so the whole valley exhales. No school holiday rush, no jostling at cellar doors. The Hunter feels quieter, calmer, almost like it's yours alone.

Three things our winter trip taught us:

→ The Homestead fireplace changes everything. Nine friends gathered across six bedrooms, a glass of red, and nobody moving off the couch until noon.

→ Cellar doors in August feel like they're yours. Without the holiday crowds, staff have time to actually talk wine with you. (We bought twice what we planned.)

→ The Brokenback Ranges look completely different in winter light. Coffee in hand, frost on the vines, warm kitchen waiting.

First morning of the weekend. Coffee in hand. The group's already splitting into two camps.

Half the crew is heading for the pool. Towels claimed, sunnies on, a long afternoon of floating and reading and not much else stretching ahead.

The other half? Pulling on the runners and grabbing a club. Our private pitch & putt is calling, and the competitive ones are already trash-talking each other across the kitchen.

Both are right. That's the beauty of it. A Woolshed Hill weekend has room for the loungers and the legends-in-their-own-lunchtime.

We almost booked four different Airbnbs for a group of 28.

Four driveways. Four sets of keys. Half the group twenty minutes from the other half. We were already exhausted, and the weekend hadn't even started.

Then someone told us you could rent an entire estate. Three houses. One property. Up to 34 people. There is one person at the other end of the phone who actually knew our names and our dates & offered plenty of local insights. Also, we skipped the online travel agents, and secured an even better deal by booking directly.
