I’ve had a busy couple of days with sharpening, but one slip of concentration tonight with a sharp knife and a few stitches are needed.
I’ll be taking a break from knives for a few weeks.

My hand sharpening stone selection and process: 400/1000 combo diamond, 325, 600, 1200, 8000 grit DMT Diamond stones, 1000, 4000, 6000 grit King whetstones, 8000 grit Shapton professional ceramic stone, 8000, 12000, 15000 grit Welsh slate, hand made leather strops with polishing compounds.
