Skip the takeaway and make this restaurant-worthy Easy Beef Lo Mein at home! 🍜πŸ₯’

Packed with tender beef, fresh veggies, and incredible flavour, this quick and easy recipe is perfect for busy weeknights. If you're a lo mein lover, this one is guaranteed to become a family favorite.

COOKING STEPS:
1. Cook the lo mein or spaghetti noodles according to the package and set aside.
2. Add the sliced beef to a large bowl and add Β½ tablespoon of neutral oil, garlic powder, onion powder, kosher salt (optional), black pepper, ΒΌ cup low sodium soy sauce, sesame oil, shaoxing wine or sherry, and 2 teaspoons of cornstarch. Cover with plastic wrap and set aside to marinate while you prep the veggies.
3. To a mixing cup or medium sized bowl whisk all of the sauce ingredients together and set aside (light brown sugar, soy sauce, sesame oil, oyster sauce, low sodium chicken broth, and cornstarch).
4. Add about 1 tablespoon of neutral oil to a large skillet or wok over medium heat.
5. Add the beef in one single layer, sear the beef on both sides and cook to your desired doneness. You will need to work in batches so you don’t overcrowd your pan.
6. Once you’ve cooked all of the beef, set aside and keep warm.
7. In the same pan, add a little more oil if needed and add in your veggies. The yellow onion, green onion, carrots and red pepper, and mushrooms. Cook until the onions are translucent. Add in the chopped garlic and continue sauteing until the garlic is fragrant (be careful not to burn the garlic).
8. Pour in your sauce, then toss in your cooked spaghetti or lo mein noodles. Add cooked beef and combine.
9. Garnish with green onion and sesame seeds. Enjoy!

This Avocado & Egg Toast with Feta is the perfect combo of protein, healthy fats and flavour to keep you fuelled throughout the day. πŸ’ͺ✨

1. Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over high heat. Once the water is boiling, reduce the heat to medium and let the eggs simmer for about 8-10 minutes for hard-boiled eggs, or 4-6 minutes for soft-boiled eggs, depending on your preference. After the desired cooking time, remove the eggs from the saucepan and place them in a bowl of cold water to stop the cooking process.
2. While the eggs are cooking, toast the bread slices until golden brown and spread with the butter.
3. Slice the mushrooms and tomato. Heat a frying pan over medium heat and add the Extra Virgin Olive Oil. Add the sliced mushrooms and tomato to the pan and cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and golden brown and the tomato is softened and lightly brown. Season with salt and pepper to taste.
4. Once the eggs are cooked, peel them and slice them in half lengthwise. Place the toasted bread slices on a plate. Arrange the avocado and boiled egg halves on top of the toast. Serve the grilled mushro oms and tomato on the side. Sprinkle with feta cheese.
5. Optonal: garnish with chopped herbs like parsley or chives, if desired.
Whether it’s breakfast, lunch or a quick post-workout bite, this easy recipe is a winner every time!
