Weekend treat for all your hard work this week

Strawberry passion fruit pancakes

Ingredients
2 cups self-raising flour
1/4 tsp bicarbonate of soda
2 tbs caster sugar
1 1/2 cups reduced fat milk*
1 egg*
1 tsp vanilla extract
1 tbs Tick approved margarine spread, melted
Reduced fat natural yoghurt*, sliced strawberries and passionfruit, to serve

1. Sift the flour and bicarbonate of soda together into a bowl. Stir in the sugar.

2. Whisk the milk, egg and vanilla together then pour into the flour mixture. Whisk until just combined. Stir in 1 teaspoon of the melted margarine spread.

3. Heat a large non-stick frying pan over medium heat. Brush pan with a little of the margarine spread. Spoon about 1/4 cup of the batter into the pan, spreading out to form a 10cm round.

4. Cook for 2-3 minutes or until bubbles appear on the surface. Turn and cook for a further 2-3 minutes, or until golden and cooked through.

5. Transfer to a plate. Cover to keep warm. Repeat with remaining batter to make 12 pancakes, brushing pan lightly with melted margarine spread between batches.

6. Serve warm with yoghurt, strawberries and passionfruit.
