CHICKEN ENCHILADAS 🍗 🌮

Macros on photo are per serve, recipe below is 5 serves 🫶🏼 (avocado is optional and wasn’t tracked)

Ingredients:
5 x mission lite wraps
1kg chicken breast diced
1 x red onion
5 x tomatoes
3-4 x capsicums
1 jar salsa
1 x enchiladas old El Paso seasoning pack
10 x tbsp light sour cream
125g light shredded cheese

Optional guac
2 x avocados
Salt and pepper
Dash lemon juice

Method:
1. Finely dice tomatoes, onion and capsicums and put them in a wok to turn into a salsa. Simmer on low heat and mix every 2-3 minutes till it’s at the consistency of salsa you like.
2. At the same time, in a separate pan, add your chicken and seasoning pack.
3. Once both your own salsa and chicken are cooked, combine the ingredients into your wok and add your jar of salsa.
4. Add even portions of filling to your wraps in 1-2 baking dishes depending on size. Top with excess salsa from the jar and all your cheese.
5. Bake at 180° for 20-25 minutes
6. Serve up and add sour cream and optional guac to the side.

In a deficit?
- These are incredible on their own, Ditch the sour cream if you need to
- use a lower calorie wrap

Bulking?
- don’t forget the guac
- don’t use a ‘lite’ wrap
- add a lil extra cheese

VODKA CHICKEN PASTA 🍝

Macros per serve in photo, recipe below makes 7 serves

Ingredients:
1.2kgs chicken breast (diced)
seasonings of choice (I used basil, oregano, onion powder, garlic powder, paprika, chilli flakes)
1 x white onion
1 x tube double concentrated tomato paste
2 x 400g tin crushed tomatoes
7 x Carrots
350g pasta
1 x 300ml tub bulla light cooking cream
100g spinach

Method
1. Start boiling your pasta and your carrots
2. In a large wok, place your chicken, seasonings and onion and start to brown.
3. Once browned, place your tomato paste and crushed tomatoes. Let started to thicken for 3-5 minutes or until chicken is cooked all the way through.
4. Add in your cream and spinach, give an incredible stir so it all mixes together and let thicken till it’s the consistency you like
5. Add pasta and carrot while still in the wok to get the flavour through everything

In a deficit?
- less chicken
- spud lite potatoes boiled with your carrots and mixed in at the end instead of pasta

Bulking?
- add a full serving size of pasta

Unromanticising the extreme side of weightloss 🫶🏼

Losing fat, getting healthier, moving your body and improving your education around your own nutrition have to be the BEST things anyone can do for themselves

It’s just you inside your body for the rest of your life so treat it right, understand it, and feel good in it every fkn day!

There’s extremes to everything and working towards an extreme goal (comp) means extreme output is also necessary, and these are only side effects of THAT

Working towards a goal you’re chasing for LIFE shouldn’t see these extremes, so if you’re relating to these cons, and you’re not working towards a bodybuilding competition, it’s time to revisit the plan, because that ain’t sustainable 💘

Everyday can be HARD but god it’d be so much harder if I was a little less strong and held a little more fat

PANCAKES 🥞
(And yes, they meal prep and keep fresh amazingly)

Ingredients
- 150g cottage cheese
- 75g egg whites
- 15g monkfruit sugar (or stevia)
- dash vanilla extract
- 1/4 tsp baking powder
Toppings
- 20ml caramel no sugar syrup
- strawberries and/or raspberries

Method:
1. Give all ingredients (not toppings) a really good mix in a mixing bowl until smooth batter forms
2. In a non stick pan, pour batter to size of your choice (I love a mini pancake bites moment)
3. Serve with toppings of choice!

Less cals?
- honestly this is a LOW calorie Brekky with incredible macros, there’s not much I’d change here!

Need more cals?
- use 1-2 whole eggs instead of egg whites
- top with higher cal toppings

Meal prep hot tip:
- if prepping these for the week, add toppings fresh daily

Who said weight loss recipes were boring?! Pancakes for brekky is always on the cards around here 🥞🤤
