🧡DELICIOUS ORGANIC VICHYSSOISE SOUP from Corinne. A great winter warmer and easy to make!
SERVES 4
*2 large potatoes, 4 leeks (only green top parts), 1 onion, salt & pepper, water.
*Stir cut onion in olive oil. Add cut vegetables and stir. Add salt & pepper. Add water to cover vegs. Cover pot and cook til tender. Blend til smooth.
GARNISH: top with plain yoghurt & parsley
SERVE: With a slice of toasted sourdough bread which has been rubbed with garlic both sides and drizzled with olive oil.
