During lockdown we have been experimenting with different salads. Here we have a Celery, Kohlrabi, Green Apple & Walnut Salad * 30ml lemon juice * 20gm dijon mustard * 2Tbs olive oil, 15gm honey * Mix the honey, dijon & lemon juice together with a pinch of salt. Blend in olive oil to form a creamy dressing. Peel & thinly slice the celery, kohlrabi & apple. Toast the walnuts & chop. In a bowl combine all ingredients with a handful or mint or parsely. Add cracked pepper & salt. Best served with oily fish or chicken. We paired ours with Dukkah crusted baked salmon. Delicious & healthy

Healthy Frittata Muffins Ingredients ~ 4 eggs ~ 4 egg whites ~ white & red onion ~ 1-2 cloves garlic ~ kale ~ capsicum ~ mushrooms ~ pumpkin ~ broccoli ~ any other veg you like. METHOD ~ cut up all vegetables into small cubes. Microwave pumpkin for about 2 mins. In a hot pan place a tbs oil add onions, crushed garlic, capsicum cook for around 2mins, then add all other vegetables for about 4 mins. Beat eggs and egg whites together. Fill muffin tray to about halfway with egg mixture then using a tablespoon add vegetables and mix. Cook on 180 degrees for around 15mins. Muffins will keep fresh in the fridge up to 4 days, also freeze well. Enjoy 😋

It's a funny thing about weight loss and how most people think it's linear. However in our experience shows us its 2 steps forward, 1 step back, 3 steps forward, 1 back etc but you never truly go backwards.

Reason why: with every try, with every experience, it gives you an extra stepping stone to which to you know a little more about you.
