There was plenty of excitement and energy in the room today as our students received their chef uniforms and jumped into the next stage of their culinary journey!

A chef’s uniform is more than just what you wear, it builds pride, professionalism and a genuine connection to the hospitality industry. At ICE, real-world preparation for commercial kitchens starts from day one.

🔥 STAGE 2 IS TURNING UP THE HEAT! 👨‍🍳🔪

Our ICE Stage 2 students have begun developing their skills in preparing and producing meat dishes, getting hands-on with a variety of cuts, techniques and flavours.

This week, pork is on the menu 🐷 - with students learning how different cuts can be prepared, cooked and transformed into quality dishes worthy of a commercial kitchen.

And then there’s the dish that always divides the crowd… blood sausage! 😲

Love it or leave it? There’s no sitting on the fence with this one!

At ICE, it’s all about giving students the confidence to get hands-on, try new things and develop the real-world skills demanded by industry. Every new technique adds another skill to their culinary toolkit. 💪👨‍🍳

Our Stage 2 students enjoyed an exciting technology update session with our valued industry partner, Unox Australia & New Zealand.

Our ICE students were busy building confidence, sharpening their kitchen skills and creating an incredible antipasto feast today, and what a spread they produced!

Our students from Mt Gravatt Community Centre continue to build their confidence, skills and passion in the kitchen, creating an incredible range of dishes inspired by cuisines from around the world.

This week's menu featured:
🔥 Chicken Curry with Boiled Eggs
🍗 Sous Vide & Deep-Fried Korean Chicken Wings
🇵🇭 Grilled Butterfly Inasal Chicken – a traditional Filipino favourite
🥬 Flavour-packed Vegetarian Curry

From mastering new cooking techniques to exploring authentic international flavours, every session is another step towards a successful future in hospitality.

There is nothing quite like watching a student’s journey unfold, and Aline’s story is one we just had to share. ✨

Aline first started with us through a Certificate I program in partnership with the incredible team at Mu'ooz Eritrean Restaurant & Catering Since then, her dedication and passion have truly shone - she has continued her studies with us and just completed her Certificate III!

For those who don’t know, Mu'ooz is a beautiful Eritrean restaurant in the heart of West End. But they are so much more than just amazing food - they are a social enterprise dedicated to supporting, training, and empowering refugee women from across Africa. Over the years, they have helped more than 400 women build new lives and careers.

We are incredibly proud to partner with organisations like Mu'ooz, and even prouder of students like Aline who put in the hard work to achieve their goals.

Congratulations to ICE apprentice James Beaven who qualified as a chef last week at ‘Todd and Pup’ in Moorooka. Thank you to Olga for helping him through his apprenticeship for the final phase. We are super proud of you James and I know your mum Linda (ex ICE student) will be so proud of you too!

Congratulations to ICE apprentice Tyson Christie who qualified as a chef this week at Gambaros/Black Hide Queen’s Wharf. It’s been a tough road for Tyson, but we are all thrilled that he finally made it. Well done buddy! Thanks to Stevie Wonder for doing one of his last sign offs for us too…
