MEET THE TEAM

You may have spotted a new face around the club, so we thought it was time for a quick introduction.

Meet Ethan, one of the newest members of our golf operations team.

Originally training as a floor layer, an injury led him to a career change and, as a passionate golfer, the golf industry felt like the perfect fit.

When asked his favourite hole at Pacific Harbour, the answer came quickly. The 4th. A challenging little par 3 that's currently the perfect distance for his 6-iron.

As for his best golf shot? He's still waiting for it.
"Golf has a funny way of keeping you humble, but that's all part of what makes the game so addictive."

Outside of work, he's studying physiotherapy and loves staying active. If he's not on the course, you'll likely find him playing basketball, touch football or rugby.

Be sure to say hello next time you see him around the club.

Sizzling sweet and sour chicken and prawn
Chicken breast pieces with whole prawns, tossed through mixed vegetables in a sweet and sour sauce, served with fried rice and brought to the table sizzling.

Pacific oysters
Fresh oysters topped with a grilled garlic, lemon and herb crumb served with charred lemon wedge.

Caramelised banana crunch
Caramelised banana layered with Biscoff crumb, creamy chocolate and hazelnut cream, finished with crushed peanuts and vanilla ice cream.

Moroccan lamb shank
Slow cooked and served in a rich Moroccan-style sauce on a bed of polenta chips, with asparagus and broccolini, finished with delicate parsnip crisps.

After years in professional kitchens and countless busy services, Hallie and Tanya have recently stepped into Sous Chef roles alongside Head Chef Scott Toohey.
