Ingredients
3 ripe bananas, mashed
2 eggs
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 cup wholemeal self-raising flour
1 cup rolled oats
1 tsp cinnamon
1 tsp baking powder
Pinch of salt
1/4 cup Greek yoghurt
Optional: 1/4 cup walnuts, almonds, or dark chocolate chips
Method
Preheat oven to 180Β°C (160Β°C fan-forced).
Lightly grease or line a loaf tin with baking paper.
In a large bowl, mash the bananas until smooth.
Add eggs, honey, vanilla, and Greek yoghurt. Mix well.
Stir in the flour, oats, cinnamon, baking powder, and salt until just combined.
Fold through the nuts or dark chocolate chips if using.
Pour mixture into the prepared loaf tin and smooth the top.
Bake for 40β45 minutes, or until a skewer inserted into the centre comes out clean.
Allow to cool in the tin for 10 minutes before transferring to a wire rack.
