Chook back here, its been a while between posts!! a lot has happened in the past year, a lot of good things but a few curve balls that life has unfortunately thrown our way and BBQ has been put on the back burner. But all has seem to sort itself out and majority seems to be looking onwards and upwards to a positive future!! Unfortunately I didn't get the chance to send this cook with me main man Bush but I had the pleasure of cooking for all my boys at EKKA and had the skilful hands of Michael Chatterton AKA Mick helping me slay this cook! couldn't of pulled it off without him. 3x 8kg briskets squashed into the pro smoke offset and a 5keg Boston butt in the bullet. Once those beasts hit the esky for a well deserved rest, on went 10kg of wings and 5kegs of Texas hot links!!! this was a quick cook proving hot and fast works well, meat went on to a hot 300 to 350f pit at quarter to 5 in the morning, by 10am and several chooks deep we hit the stall! wrapped the trio along with the butt for a send till noon. Near on a two hour rest for the major proteins it was time for the minors chance to shine! Briskets were a simple salt and pepper rub, pork had Lanes signature on it with Stubbs OG BBQ sooooorce if desired. Wings were a mix of Lanes signature with a hit of Nando's lemon herb for the weak :P and then the other half was Lanes Sweet-Lic with Franks hot sauce for the brave :) all in all, it was a cracking day!!
