Start your day right with a ….. Great source of protein Low calorie Easy on your wallet!

All sorts of variations you can use, but todays is a naughty smoked salmon and soft cheese frittata…

Ingredients:6-12 eggs (depending on size of pan and how many you wish to feed)1 cup chopped spring onionhandfull of smoked salmon low fat soft cheese Hand full of fresh chopped dillSpinach

Method:Simply whisk all egg whites, and 2-4 yolks with seasoning until all the proteins have broken down and the mixture is one colour (no separated whites)Add seasoned eggs to a non stick pan, with chopped spring onions and salmon- mix well to get even distribution Add small amounts of soft cheese dotted around the mixture, as if it were a pizzaTurn the heat up to a high medium temp- cook for 2-3 mins until you see colour change and sides beginning to hardenRemove pan from heat and place in the oven, under the GRILL for 5-6 mins at 170.Carefully remove pan (it will be HOT!) use a knife to pry the edges away from the pan lip, gently shake, and turn out onto a plate/ board. Finally season, sprinkle dill over the top and serve with spinach hot or cold.

Any variations make sure if using a meat, cook before you add to eggs.
