Gluten in America and South Africa and other parts of the world that use desiccation as their pre-harvesting practice for wheat, use Glyphasates known as Roundup before they harvest the wheat. Roundup is a herbicide that is toxic for our gut and causes inflammation and leaky gut, which in turn is the root cause for many inflammatory deseases that we suffer from like Rheumatoid arthritis, Asthma and Crohns desease.
So where possible avoid regular bread, pasta and wheat products - unless they come from Italy and most European countries, where this farming practice is not used and therefor gluten containing products are great for you!!
Here is one of my favourite recipe for a Gluten-Free Brown Soda Bread:
This bread is gluten-free, dairy-free and yeast-free.
Ingredients:
⢠250g Brown Rice Flour
⢠125g Buckwheat Flour
⢠75g Chickpea Flour or Teff Flour
⢠2 tsp Baking Soda
⢠1 tsp Baking Powder
⢠2tsp Xanthum Gum
⢠1 Cup Warm Water
⢠1 Cup Warm Non-dairy Milk (Almond, Oat, Rice, ect)
⢠4tbsp â Lemon Juice/Apple Cider Vinegar
⢠3tbsp â Olive Oil
⢠1tsp Salt
⢠1tbsp Sugar (You can omit for sugar free diet)
Method:
1. Preheat oven to 180 °C
2. Prepare a loaf tin for baking â oil lightly and use baking paper on the bottom.
3. Mix all dry ingredients together in a mixing bowl.
4. Mix all liquid ingredients together and add to dry ingredients.
5. Mix well until a smooth batter is formed.
6. Put the batter into the loaf tin and bake for 35-40 minutes, until a skewer inserted comes out clean.
