One of the easiest ways to up your veggie intake is by having a HUGE salad for lunch. What are your fave things to throw on a salad? 🥗

If you are short on time, take advantage of the pre-chopped veggies at the grocery store. Yes, they are pricier, but if it’s between that or grabbing some takeout or pre-made meal, then they are a much healthier and cost-effective option.

Breakfast seems to be the hardest time for most people to get in those veggies.

Here are a few ideas: throw spinach into your green smoothie, add some riced cauliflower or shredded zucchini to your oats, or scramble up eggs with some onion and bell pepper. 🫑🥒

Raw, roasted, sauteed, baked, steamed, in a smoothie, soup, or stew - there are so many amazing veggies and so many ways to enjoy them! Try to choose lots of different colored veggies to ensure that you’re getting a wide variety of vitamins and minerals. This week’s challenge is to make sure you are getting in five servings of veggies a day.

What’s a serving? Think about a fistful of veggies (or about a cup). Veggies are easy to add to any meal especially now that you can buy so many veggies already washed and prepped! 🥦🫑🌽🥕

Let’s mix things up again today and superset our squats and push-ups! Today we have 25 push-ups and 40 squats, so let’s do 3 sets of 8 push-ups and straight into 13 squats and repeat for three sets for a quick total body workout! (You can add the missing rep at the end!)

Squats and push-ups are both amazing compound exercises that you can do anywhere with simply your own body weight. For this week’s mini-challenge, to make sure you are moving outside of boot camp, we are having a push-up/squat challenge. Start with 5 push ups and 20 squats, then each day add five more. Also, note that you don’t have to do 35 push-ups at once! You can break it down into 3 sets or however you like. As always, work within your level (ie wall push-ups for level 1 and knee push-ups for level 2) or add weight if you want to increase the challenge of the squats!

• Day 1 – 5 PU and 20 squats
• Day 2 - 10 PU and 25 squats
• Day 3 – 15 PU and 30 squats
• Day 4 – 20 PU and 35 squats
• Day 5 – 25 PU and 40 squats
• Day 6 – 30 PU and 45 squats
• Day 7 –35 PU and 50 squats

Invest in a cute lunch bag or containers! Cook once eat twice! When making dinner, make extras to bring for lunch the next day. An easy trick to save time in the morning.

When planning what to bring for lunch, think of a protein source, veggies and fruits, a healthy carb source, and a healthy fat. Need some ideas? Try a wrap stuffed with veggies, chicken, hummus, and a side of fresh berries, or a huge salad topped with protein, some nuts, feta cheese, and olive oil. Share your fave lunch ideas with us here.

Packing your own lunch can do a lot for your waistline (and your wallet!). Not only is eating out super expensive, but you also have no idea what’s in the food you are eating, and even if they have the nutritional information, it can be off for a variety of reasons. By packing your own food you are in control of what goes in your body, and you can make sure to eat up those dinner leftovers which means less food waste. This week the challenge is to bring your own lunch to work and if you work from home, make your own lunch at home instead of going out.

When it comes time to go shopping, stick to your list and don’t let unhealthy extras sneak into your cart! If certain foods aren’t in your house, you are less likely to eat them and stick to your meal plan. Plus it will save you a ton of money by avoiding those impulse buys. 👍🍏
