A small wee piece of pork belly ready for some tacos tonight on the
Bronco.

Took the skin off and rubbed the belly down with umami garlic butter and pork rib rub. Cooked at 280 for 5 hours until meat jelly with coconut briquettes.

By far my favourite way to smash a belly out.

Throwing down some Wakanui Beef cheeks on the Oklahoma Joe's Smokers NZ bronco. Over the course of the cook the bronco moved within 5 degrees of the target of 300 fahrenheit, what a beast.
The Four Saucemen black rub helped out with that bangin bark and awesome flavour as well as Heat Beads BBQ supplying the goods always.

So it turns out I’m not the best at preparing a healthy meal. At least the plate is greenish 😁
Besides the fact I may have run the Whitehart babybacks an ounce long, and may have used the dregs from three different sauce bottles to make a glaze, they were bloody decent for sure.
Added bonus, these take less than 4 hours to cook, so handy as when ya want some “fast food” 😜
