An easy weeknight meal.

Roasted eggplant (400 for 20 mins w olive oil, salt,pepper, fresh garlic and fresh basil)
Meat sauce (that’ll be a recipe for another day)
Romano cheese (on everything)
pizza (which I obviously can’t call pizza 😆) but I actually really love.

The perfect pairing: brocolli rabe and cheese.

I’m also into chickpea pasta these days, and added some into this dish. Chickpea pasta has a great al dente sort of bite and is nutty in flavor. It’s actually really good with veggies like roasted eggplant, peppers, zucchini, and here with broccoli rabe. (all with Romano cheese of course).

I’ll add it so long as it’s not with real sauce (because I’m a purist there 🍝). It is around 23g of protein and 11g of fiber, depending on the brand, high in iron and vitamin B, making it super nutritious and satisfying. 👍🏼💕

I’m not a “one education style” kind of gal. But when I read some of her words, they resonate so deeply. It is in those moments that I really allow the kids to not just survive, but really live, I see them THRIVE. And it encourages me to do the same. 💕

To you, this photo might mean little. But to me, it means everything. His pencil grip, his focus, his excitement to write his name, his determination to get it right in the little line.

One of the most amazing things as a parent is the gift we have of watching our children blossom right before our eyes. It is miraculous, really. It inspires wonder and awe and such joy.

I like to mark all the moments because of how funny and mischievous this child is. But really, he is a marvelous little one. And it’s so fun watching him grow.

So proud of you little buddy. Keep it up. 💕

My firecracker 🧨 of a child.

These days I love seeing how hard he’s been working to grow and learn and practice virtue. It happens under our noses, but I’m happy to step back for a minute (usually when they’re sleeping and I forget all the sour and remember all the sweet) and be grateful for the little things.

The days are long but the years are short. And this is really quite marvelous. 🥰

I’m pretty amazed and humbled at the role we have as moms. With an emphasis on humbled.

They watch us. They listen (even if they pretend not to). They hear how we speak and act. The people we love deeply, they love deeply.

What responsibility. And what joy.
And yes, what humility knowing that all of our hopes and dreams for who we want to be will never come to complete fruition. We will fail. Over and over. We will not ever be enough. Not what they deserve anyway.

And yet, it’s OK. Because in that, we can teach them why we need a savior. In those moments when we fall, we can teach them that we fall beneath the cross of Christ. In those days, we can show them that God is enough and it is in our weakness that His power is made perfect.

Mom, don’t forget that. Don’t ever forget that. And don’t ever stop falling at His feet. Because they watch. And they learn.

Our family and yours will never be perfect. It will never be enough. And it’s OK. Because He is.

If you live in Long Island or come to visit, bagels and lox are a must have. I had a hankering and decided to give it a healthier and extremely satisfying spin.

Thin-Sliced Good Seed bread, toasted. Two slices of smoked salmon. Sliced red onion. And a sprinkle of goat cheese (traditionally would be cream cheese but I didn’t have any handy and this was actually great)!

Oh, and don’t forget to top it with EBTB seasoning ( ).

Perfection.
