Tired of eating salads or raw kale just isn’t your thing? TRY THIS! Need a fiber-filled side dish to go with the garlic ginger turmeric rice from my last post? TRY THIS!

INGREDIENTS (Serves 2-3)
3-4 organic kale leaves
6-8 organic garlic cloves
1/2 organic yellow onion
6-8 organic crimini mushrooms
2 tsp organic ground mustard seed
2 Tbsp extra virgin olive oil
Salt and pepper to taste

PREP (Videos 1 & 2)
Wash kale and pick bite size pieces off the stem. Add ground mustard seed and black pepper. The ground mustard seed is KEY! Heat normally breaks down sulforaphane, but ground mustard seed will help retain some of it. The spicier the better 🔥 Drizzle with olive oil and massage until evenly coated and slightly wilted.

Smash garlic cloves to remove the skin. Peel and julienne (cut along its axis) yellow onion into eighths. Slice mushrooms.

COOKING (Video 3)
Heat a well seasoned cast iron skillet over medium hi. Just as the pan starts to smoke, add the mustard seed-massaged kale to the pan. Keep it moving and sauté for 2 minutes. It should be bright green with some light charring. Remove from the pan and set aside.

Add ~1 Tbsp olive oil to the pain. Just as the oil starts to smoke, add garlic and onions. Stir until evenly coated with oil. Add mushrooms, salt and pepper, and drizzle with olive oil. Sauté until onions are translucent and mushrooms glisten. Keep the texture! It keeps the fiber content and makes for a heartier dish! Remove from heat and add kale back in.

Today this was for brunch, and yes that is some all natural, uncured, thick cut bacon and organic free range eggs! 🥓🍳🤤 Some fat is OK in moderation, and best when eaten with fibrous carbs vs. simple carbs. Let me know what you decide to eat with this veggie side dish!
