EASY ONE PAN DINNER 🙌🏼 And yes, it’s as good as it looks.
Makenna and I made this Chicken Parmesan Gnocchi from my Home Cooked Meals cookbook, and this is one of those dinners that checks ALL the boxes: easy, cheesy, macro friendly, and something the whole family will actually eat. 👏🏼
I realized this family-style version isn’t on our website, so I’m putting the full recipe right here for you!

Makes 7 servings
Serving size: 250g

INGREDIENTS
2 lbs boneless, skinless chicken breasts
16 oz pkg. potato gnocchi
1 Tbsp butter
1½ cups chicken broth
1½ cups marinara sauce (any good red sauce you like)
⅓ cup shredded Parmesan cheese
1 cup shredded mozzarella cheese
INSTRUCTIONS
1. Cut chicken into 1-inch cubes. In an oven-safe pan over medium heat, cook chicken until no longer pink. Remove and set aside.
2. Add butter to the same pan. Once melted, add gnocchi and sauté for a few minutes until golden brown. If it starts sticking before it browns, go ahead and add the broth.
3. Add chicken broth and simmer for about 5 minutes, until the broth begins to thicken.
4. Add the chicken back to the pan along with the marinara sauce. Cook another 2–3 minutes.
5. Turn your oven broiler to HIGH.
6. Top with Parmesan and mozzarella. You can stir some of the cheese into the mixture first if you’d like!
7. Broil for 3–4 minutes, or until the cheese is melted, bubbly, and golden.
And dinner is DONE. One pan, 33g protein per serving, and minimal cleanup. 🙌🏼
