Happy Thanksgiving week everyone! As most of you know, I love to focus on health! Here is a great Recipe for a fresh & healthy Cauliflower Stuffing Recipe, perfect for a healthy Thanksgiving side dish!

Cauliflower Stuffing
The perfect recipe for your Holiday Thanksgiving Feast. This will replace your traditional bread stuffing and become a family favorite!

Ingredients:
• 3 tbsp. butter
• 1⁄2 cup green onion, chopped
• 1⁄2 cup celery, chopped or thinly sliced
• 2 1⁄2 cups cauliflower, chopped
• 1 cup chopped mushrooms
• 1⁄2 teaspoon kosher salt
• 1⁄2 teaspoon freshly ground black pepper
• 1/4 cup freshly chopped parsley
• 2 tbsp. finely chopped fresh rosemary
• 1/2 tbsp. ground sage
• 1⁄2 cup vegetable or chicken broth

Instructions:
1. In a large skillet over medium heat, melt butter, green onion
and celery and sauté until soft, 7 to 8 minutes.
2. Add chopped cauliflower and chopped mushrooms and
season with salt and pepper. Cook until tender, 8 to 10
minutes more.
3. Add parsley, rosemary, and sage and stir until combined.
Pour over broth and cook until totally tender and liquid is
absorbed, 10 minutes.

Makes 3 servings
