If you are struggling to hit your protein and fiber goals, it is probably because no one showed you how to combine them like this!
French green lentils, soaked and slow-cooked, with two pasture-raised eggs sunny side up in ghee, a drizzle of Laconiko Greek seasoning olive oil, salt and pepper … that is the whole meal!
Here is what is in this bowl:
Protein: ~40g
Fiber: ~23g (close to 80% of your daily recommended intake)
Fat: ~15g from egg yolks, ghee, and olive oil
Calories: ~475 to 500
Fiber slows how fast glucose enters your bloodstream, feeds your gut microbiome, and keeps you full without the crash that comes an hour after a carb-heavy meal. Protein is the most satiating macro you can eat, and paired with fiber it is what makes this meal hold you for hours.
And the fat is the piece I really want you to understand. Vitamins A, D, E, and K are fat-soluble, meaning your body cannot absorb them without fat present. The egg yolks, the ghee, the olive oil are not extras. They are doing real nutritional work in this bowl.
This is what intentional eating actually looks like. Simple ingredients that come together to make something truly nutritent-dense and satisfying!
