Save my Hainanese Chicken and Rice recipe. Start with cooking ¼ cup of chicken skin in a large pan to render the fat, remove the crispy skin and add 1 tbsp minced ginger, 1 tbsp minced garlic and 1 tbsp minced shallots. Cook on low heat and add 2 cups rinsed rice, ½ tsp salt and 3 ½ cups chicken stock. Season 5-6 boneless chicken thighs with 1 tbsp salt and 1 tbsp turmeric powder and add to pot. Sprinkle a few chopped green onions and cover with a lid, bring the heat to low and cook for another 25 minutes. The ginger scallion oil is 2 tbsp minced ginger, ¼ sliced green onions, ¼ cup hot oil and ½ tsp salt. Also I served with soy sauce and chili sauce.
