Make these ahead and keep in the freezer. Easy to microwave and add to sauce for a quick lunch - I heat them up in the morning and put them in a thermos for Baker. Put on a roll with a little shredded cheddar cheese, and she was a very happy camper. (She actually added the cheese at lunch from a friend, so I can't take credit for the idea!) I had them over spaghetti squash with marinara sauce - delish!

Breadless Italian Meatballs
1 pound grass fed beef (I used Stop & Shop’s Laura’s Natural & Lean - 90%)
1/2 teaspoon sea salt
1/4 cup onion minced (I grated one onion so Baker wouldn’t see the chunks - it’s a pain & you can’t see the grater because you tear up so much, but it works)
1 small garlic cloved minced
1 1/2 teaspoons Italian seasoning
1 beaten egg
1/2 cup almond flour

Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Mix all of the ingredients together in a large bowl. I rolled them into 1.5" meatballs and baked for about 20 minutes.

(Don’t do what I did which was let them cool on a paper towel in a container and then stick the container right in the freezer. Having to microwave the meatballs to remove the paper towel bits was an extra, unanticipated step. The good news is that Bob & Baker loved them!!)

Wednesday Workout
100 Burpees in 10 minutes
(Thank you to Shawna Kaminski for this one!)
Set your Gymboss Timer for 1:00 and 10 Rounds
1. Regular Burpee
2. Double Jump Burpee - burpee, then 2 jumps
3. Mountain Climber Burpee - burpee, knees to chest alternating - 1x,
4. Frogger Burpee - burpee, then squat thrust, then up
5. Get Up Burpee - burpee, then down to forearm plank on rt, back up, alternate to other side on next round.
6. Reverse Lunge Burpee - burpee, come up, rev lunge rt, then lt, repeat
7. 3 Jacks & A Burpee
8. Long Jump Burpee - a doozy - broad jump, then burpee, come up, repeat (for small spaces, turn around after you come up - watch it if you get dizzy)
9. Skater Burpee - burpee, then skater rt/lt
10. Push Up Shoulder Tap - burpee + push up + tap rt shoulder, then lt shoulder, then back up.
Enjoy!!! It's a great one as a finisher!
