It's going to be a cold one this weekend❄️. Stay warm, eat well, and get in your macros with this high protein white chicken chili. This is a family favorite at our house we thought we would share with you. Even our kids love it!
Ingredients:
1 tbsp olive oil
1 small yellow onion, chopped
2 garlic cloves, minced
2 1/2 cups chicken bone broth
2 (4 oz) cans diced green chilies
1 1/2 tsp ground cumin
1/4 tsp cayenne pepper
1/2 tsp dried oregano
1/2 tsp paprika
2 scoops unflavored collagen peptides
1/2 small lime, juiced
Salt and pepper, to taste
2 (15 oz) cans Great Northern beans
1 cup plain non-fat Greek yogurt
1 cup corn
4 heaping cups cooked chicken, shredded
Instructions:
1️⃣ Heat olive oil in a large pot over medium-high heat. Add onion and sauté until softened (3–5 minutes). Add garlic and cook for 30 seconds.
2️⃣ Stir in the chicken bone broth and green chilies. Add the cumin, cayenne, paprika, oregano, lime juice, and the collagen peptides. Whisk until the collagen is fully dissolved. Season with salt and pepper.
3️⃣ Drain and rinse the beans. Place one large ladleful of beans into a food processor or blender with a splash of the broth. Puree until completely smooth.
4️⃣ Add the pureed beans, the remaining whole beans, and the corn to the pot. Bring to a simmer and cook uncovered for 15–20 minutes to allow the flavors to meld and the broth to thicken.
5️⃣ Remove the pot from the heat. Stir in the Greek yogurt and the 4 cups of shredded chicken. Stir until the chicken is warmed through and the chili is creamy. If it is too thick add more bone broth to thin it out.
6️⃣ Garnish with cilantro, avocado, or a sprinkle of shredded cheese for an extra small protein boost.
