Ask and you shall receive: For the last of these cold winter days:

You know what they say about men who share recipes. This is a good one and all the chopping is quite fun:

Ingredients
2-3 tbsp. Olive oil
3-4 garlic cloves minced
15-20 mushrooms finely chopped
1 big yellow onion finely chopped
1 big red bell pepper finely chopped
1 big green bell pepper finely chopped
1 pablano pepper finely chopped
1/2-3/4 cup carrots finely chopped
1 tsp cumin
1-2 tbsp. chili powder
1tbsp Tabasco sauce
sea salt and black pepper to taste (1-2 tsp each)
3 ears of corn w/ kernels shaved off
1 - 28 oz. can plum tomatoes
15oz tomato puree
15oz black beans (drained)
15oz pinto beans (drained)
15oz red kidneys (drained)
1 c. dry bulgar wheat

Instructions

Heat oil in a large stock pot. Add garlic, onion, peppers, mushrooms, and
carrots, along with the spices, and sauté for 10 minutes, or until the
onions become transparent and veggies are tender. Add remaining
ingredients, cover and simmer over low heat for 30 minutes, stirring
occasionally. Taste test and see if any additional salt or pepper are
needed. Uncover and continue to simmer for an additional 20-30 minutes.

Serve over quinoa w/fresh cilantro and a half avocado (diced)
