Salad for breakfast!? This is actually my favorite way to get my leafy greens in. Do you ever sit down in front of a big beautiful salad and 30 bites later, it still looks as big as it was when you started?
this pan started out, overflowing with greens, probably about 4 cups worth.
l sauté my greens lightly over low heat in a pan using avocado oil, a tiny bit of lemon juice and my homemade garlic rosemary salt. remove from the heat when everything is wilted, but not yet mushy.
This is usually what I have with eggs in the morning.
Give it a try!
