Be bold this Monday and work towards something you've always wanted!! My fitness goal this week is to hit 20k steps EVERY day! Hopefully I hit 140,000 steps at the end of the week!

Get ready for a treat, Sassy Fitnessers! I had a taste of this tonight and LOVED it! Can't wait to have it on Monday!

Time: 1h 15m; makes 12-1/2c servings at 123 calories!

You'll need: 2 TBS EVOO, 1 medium onion, 4 garlic cloves, 1-6oz can tomato paste, 1/4c wine, 2-28oz cans WHOLE tomatoes, 2 TBS agave nectar, salt and pepper to taste, 1-3oz Parmesan rind.

1. Prep by cutting up the onion, garlic, and cheese rind
2. In a saucepan, on medium-high heat, heat EVOO, then add onion
3. Cook onion until translucent, then add garlic, add tomato paste, reduce to medium heat and stir for 2-3m.
DON'T let the paste burn
4. Add wine, cook for 2-3m
5. Add whole tomatoes, agave, salt and pepper. Bring to a gentle boil on medium high heat stirring frequently; I broke up the tomatoes with my spatula as they cooked.
6. Reduce to low heat, add Parmesan
7. Over the next hour, stir sauce regularly (every 5-10m)
8. Enjoy with your favorite pasta or zoodle!

Hello all! Sassy Fitness was on a brief hiatus but we're back!

We're ready to get back into our clean eating and fitness and hope you are too!

Here is a great, easy, and delicious recipe to have during these hot summer days. Enjoy!

Watermelon, Avocado, and Mint Salad with Feta Cheese
Prep time: 20 mins
Total time: 20 mins
Serves: 4

Ingredients
4 cups of cut watermelon, 1 inch cubes
1 ripe avocado, cut into small slices or cubes
Β½ red onion, thinly sliced
Β½ cup fresh mint, chopped
2 tablespoons good olive oil
1 tablespoon lime juice, freshly squeezed
1 teaspoon coarse sea salt
ΒΌ teaspoon black pepper
Β½ cup feta cheese, crumbled
Instructions
Place watermelon, avocado, red onion slices, and mint in a large salad bowl.
To make the dressing, whisk olive oil, lime juice, salt and pepper.
Drizzle over the salad. Gently stir everything to combine.
Cover it with stretch film and let it marinade in the fridge for 30 minutes.
When ready to serve, sprinkle crumbled feta cheese on top.

One of the best lessons I learned during my fitness journey is to ignore the scale. When you aren't obsessed with the numbers, your more focused on just being healthy. And just because the number doesn't decrease as quickly as we all want, doesn't mean you are transforming you body!

do not add anything to the smashed avocado when you put into plastic container and add the avocado seed; it will keep the rest of the avocado fresh :)
