Letson Manok

Ingredients
For the chicken:
1 kg chicken thighs, legs, or wings
½ cup vinegar
¼ cup calamansi juice (or lemon juice)
¼ cup soy sauce
6 cloves garlic, minced
1 thumb-sized ginger, grated
2 stalks lemongrass, bruised and chopped
1 tbsp brown sugar
1 tsp salt
½ tsp black pepper
1 tsp annatto powder (atsuete)
For basting:
¼ cup melted butter or margarine
1 tbsp annatto powder
1 tbsp calamansi/lemon juice
1 tbsp soy sauce
👨‍🍳 Instructions
Marinate the chicken
Mix vinegar, calamansi, soy sauce, garlic, ginger, lemongrass, sugar, salt, pepper, and annatto. Add chicken and coat well.
Refrigerate for at least 4 hours, preferably overnight.
Prepare the grill over medium heat. Remove excess marinade from the chicken.
Grill the chicken, turning every few minutes so it cooks evenly. Brush generously with the basting sauce each time you turn it.
Continue grilling until the chicken is nicely charred and the inside is fully cooked—about 25–35 minutes, depending on the size of the pieces. For safety, the thickest part should reach 74°C / 165°F.
Serve hot with steamed rice, atchara, and chicken oil or your favorite dipping sauce

Kalderetang Baka
Serves: 4–6 people
Prep time: 15 minutes
Cooking time: 1½–2 hours
Ingredients
1 kg beef, cut into cubes
3 tbsp cooking oil
1 medium onion, chopped
5 cloves garlic, minced
2 medium tomatoes, chopped
2 tbsp tomato paste
1 cup tomato sauce
2 cups beef broth or water
2 medium potatoes, cubed
1 large carrot, cubed
1 red bell pepper, sliced
½ cup liver spread
2 tbsp soy sauce
1–2 tbsp fish sauce, to taste
1 tsp ground black pepper
2 bay leaves
½ cup green peas (optional)
2–3 tbsp grated cheese (optional)
Chili peppers, optional
Salt, to taste
👨‍🍳 Instructions
Brown the beef: Heat oil in a large pot. Sear the beef until lightly browned. Remove and set aside.
Sauté: In the same pot, sauté garlic, onion, and tomatoes until soft.
Build the sauce: Add tomato paste and tomato sauce. Stir for 1–2 minutes.
Simmer: Return the beef. Add beef broth, soy sauce, bay leaves, and black pepper. Cover and simmer on low heat for 1–1½ hours, or until the beef becomes tender.
Add vegetables: Add potatoes and carrots. Cook for about 10–15 minutes.
Make it rich: Stir in the liver spread and add bell pepper and green peas. Simmer for another 5–8 minutes.
Season: Add fish sauce and salt according to taste. Add chili if you like it spicy.
Finish: For a richer, creamier kaldereta, stir in grated cheese before turning off the heat.
Tip: For extra-tender beef, you can use a pressure cooker and cook the beef for about 25–30 minutes before adding the vegetables.
Serve hot with plenty of steamed rice. 🍚🥩
