Ingredients
* 2 red bell peppers
* 2 tbsp tomato paste
* 1 small onion
* 2 cloves garlic
* 2 tbsp olive oil
* ½ tsp smoked paprika
* ½ cup water or vegetable stock
* Salt and black pepper
* Optional: chili flakes, ½ tsp sugar, or a splash of lemon juice
Method
1. Char the peppers: Roast the bell peppers over a gas flame, under the grill/broiler, or in a very hot oven until the skin is blackened and blistered.
2. Put them in a covered bowl for 10 minutes, then peel off the skin and remove the seeds.
3. Sauté onion in olive oil for 4–5 minutes. Add garlic and cook for 30 seconds.
4. Add the tomato paste and smoked paprika. Fry for about 2 minutes to deepen the flavor.
5. Add the roasted peppers and water/stock. Simmer for 10 minutes.
6. Blend until completely smooth.
7. Season with salt and pepper. Add a little lemon juice for brightness or sugar if the tomato tastes too acidic.
For an extra smoky flavor: add a little more smoked paprika or char the peppers until they are quite dark.
This makes a great sauce for pasta, chicken, steak, grilled vegetables, or dipping with bread.
