Wheat grain constitutes of 4 parts namely:
1.) Wheat bran (in simple language fibre)
2.) Vitamins and minerals
3.) Endosperm (it contains protein and carbs)
4.) Germ
White bread - It is just made up of endosperm which means fibre or wheat bran part is removed in processing.
Brown bread - Brown bread or whole wheat bread includes all parts of the grain the bran, endosperm and the germ.
Now, the science part: * White bread has a higher glycemic index which means it converts easily to glucose and releases energy. Brown bread is more of complex carb so has a low glycemic index and releases glucose in the blood slowly. But again it doesn't justify any healthiness, white bread can be used after a workout for fast energy. Also, overall daily calories have to be in control to maintain/lose weight, eating brown bread alone won't help. * Let's compare their calories. I am taking most popular bread in India that is Harvest Gold (though even other brands won't have much of a logical difference): 1.) Harvest Gold 1 White Bread slice contains 75 calories and 2 gm of protein.
2.) Harvest Gold 1 brown bread slice contains 68 calories and 2 gms of Protein.
Now, you must have got the point, the calories in both breads are almost equal. 7 calories in a day won't play a very important role in your diet. Even to lose 0.5 kg of fat per week you need to be on 500 calories of deficit daily. * Now come to vitamin and mineral part:
Harvest Gold brown bread contains 131 mg sodium, 71 mg potassium. Iron is 5% and calcium is 2%. Harvest Gold white bread contains 166 mg sodium, 31 mg potassium. Calcium content is 30% and iron is 0%. Green vegetables, dairy are the right sources to fulfil your need for calcium, iron or any other vitamin/mineral, not bread.
Conclusion: Any bread which fits in your daily macros is a good option. Brown or white doesn't really make an impact.
