Balsamic Chicken Pasta with pan fried cherry tomatoes & zucchini, basil & feta.
Ingredients:
Medium chicken breast 130g pasta (your choice) Half pack cherry tomatoes Half medium zuchinni 30g feta cheese 4 tbsp balsamic vinegar 1/2 tsp black pepper 1/4 tsp salt Tbsp olive oil Half bunch of basil leaves
Method:
Place chicken breast in deep bowl, add 3 tbsp of balsamic vinegar, pepper & salt. Leave to marinade for about 30 minutes. Wash zucchini & tomatoes, slice zucchini. Set aside until ready to cook. After 30 minutes, place chicken in air fryer. Cook at 180° for Approx 15-20 minutes until cooked through. Turn off air fryer once cooked but leave the chicken inside to sit until your ready to serve. Whilst chicken is cooking, add boiled water to a pan, add pasta & cook between 12-18 minutes, depending on pasta. Until softened. Heat a frying pan, add olive oil. Place zucchini flat side down, brown either side. Place in bowl to one side once cooked. In same pan, throw in tomatoes & move around pan to brown skin and heat through. Drain off pasta, place back into empty pan the pasta was cooked in. Add zucchini & tomatoes to pasta and stir. Chop 3/4 of the basil & add to pasta mix, place rest aside for topping. Add another tbsp of balsamic vinegar to the pasta. And stir again. Plate up the pasta, remove chicken breast from air fryer, slice & place in top of pasta. Crumble on feta cheese, top with rest of basil and enjoy!
