We were recently approached by Jo and asked to choose from a series of her beautiful poems.

Bizarrely — or perhaps not so bizarrely — Sharon and I chose exactly the same one:

“She waited for the perfect time,
The one when she’d be ready.
The moment didn’t come around,
So she braced herself, unsteady.

She went for it. She tumbled
A few times along the way,
But she made so much more progress
Than the times when she’d delayed.”

As female founders, this was something we really needed to hear.

Sometimes, there is no perfect time. Sometimes you just have to take the leap even if you feel unsteady and even if you tumble along the way.

It was so lovely to meet you, Jo. Thank you for sharing your beautiful poems with us and for such a lovely interruption to our day.

Just a little message as we have only 2 spaces left for our Gavin Sisters Day Retreat at the beautiful Whalebones Wellbeing Centre in Barnet on Sunday 13th September.

Strawberry Cashew Mousse with Dark Chocolate & Walnuts

A deliciously creamy, plant-based dessert that tastes indulgent but is made from simple, nourishing ingredients.

Fresh strawberries are blended with creamy cashews to create a silky, naturally sweet mousse, then topped with a layer of rich dark chocolate and crunchy walnuts.

Why we love it

This is a great example of how you can create a naturally sweet dessert while balancing it with healthy fats, protein and fibre.

Strawberries provide natural sweetness along with fibre and vitamin C, while the cashews add healthy fats, protein and fibre. The walnuts provide even more healthy fats, fibre and plant-based protein, and the dark chocolate brings a rich, satisfying finish.

Importantly, pairing naturally sweet fruit with nuts and seeds can help slow the digestion and absorption of carbohydrates, which may lead to a gentler blood-sugar response than eating a sweet, carbohydrate-rich dessert on its own. The fat, protein and fibre from the nuts help make the dessert more satisfying too.

So rather than simply removing sweetness, it’s about what you pair it with.

We made these at The Detox Barn longevity retreat! They were delicious

For the mousse

• 250g fresh strawberries
• 150g raw cashews, soaked for 4–6 hours and drained
• 1–2 tbsp maple syrup, optional
• 1 tsp vanilla extract
• A squeeze of fresh lemon juice
• A splash of plant milk, if needed

For the topping

• 80g good-quality dark chocolate
• A handful of walnuts, roughly chopped
• Fresh strawberries, to decorate

Method

1. Soak the cashews for 4–6 hours, then drain and rinse well.
2. Add the strawberries, cashews, vanilla, lemon juice and maple syrup, if using, to a high-speed blender.
3. Blend until completely smooth and creamy, adding a small splash of plant milk if needed.
4. Spoon into glasses or small bowls and chill for at least 1–2 hours.
5. Melt the dark chocolate gently and spoon or drizzle over the chilled mousse.
6. Sprinkle generously with chopped walnuts.
7. Chill again until the chocolate has set.

We pour so much love, energy and passion into every retreat, so hearing that it has made a difference to someone is the greatest reward we could ask for

I’ve had a few requests for these lovely bars! Nicky Hardy Holistics here it is! Honestly so easy and delicious (I used raisins instead of apricots as I didn’t have any!)

Healthy No-Bake Granola Bars (makes 1 tray / 16 bars)
Ingredients
400g rolled oats
200g milled flaxseeds
80g toasted pumpkin seeds
80g toasted sunflower seeds
200g dried apricots
480g peanut butter
12 tbsp maple syrup
200g dark chocolate or coconut oil with organic cacao
Sea salt
Chopped walnuts, to garnish

Method
Toast and blend the pumpkin and sunflower seeds.
Chop dried apricots.
Mix all ingredients together and press firmly into a parchment-lined tray.
Melt chocolate (or coconut oil with cacao) and drizzle over the top.
Sprinkle with sea salt and chopped walnuts. Chill before cutting into 16 portions.
