- Considered a superfood (nutrient-rich food that’s especially beneficial for health and well-being)

- Complete protein source (contains all of the essential amino acids)
- High in complex carbs 21.0/100g
- High in vitamins and minerals
- Linked to improved blood sugar control and heart health
- It’s a pseudo-cereal but behaves like a grain. A little bland but a great addition to dishes for a low impact protein/health boost!! 🚀
Buckwheat Currrryy 🍲
- Prepare 100-200g buckwheat as per the instructions (it’s so simple/quick to cook)
- 2 red onion
- 3 garlic cloves, ginger
- Fresh chillies
- Diced tomatoes
- Spinach
- Tomato passata
- Tomato purée
- 2 ex.vir olive oil
- Season as per your curry selection
- Tin of chickpeas 6.7/100g
- Cashews 19.8/100g
- Coriander for garnish
- Salt + pepper to taste
- Natural yoghurt
Cooking instructions:
Onion + garlic + ginger + chillies + oil > seasoning + purée > chickpeas + tomatoes + cooked buckwheat > spinach + yoghurt + cashews > plate + garnish > serve w/ brown rice or wholemeal bread
