✨ Recipe: Cauliflower Leaf & Potato Curry ✨
🥬 What you’ll need:
• Cauliflower leaves (from our honesty stall!)
• 3 medium potatoes, diced
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 tbsp fresh ginger, grated
• 1 tbsp oil
• 1 tsp cumin seeds
• 1 tsp ground coriander
• ½ tsp turmeric
• ½ tsp chilli powder (optional)
• 400ml coconut milk (or water)
• Salt to taste
• Fresh coriander (optional)
👩🍳 How to make it:
Heat the oil in a pan and add the cumin seeds. Let them sizzle.
Add the onion and cook until soft, then stir in the garlic and ginger.
Add the spices and cook for 1 minute until fragrant.
Add the diced potatoes and stir to coat in the spices.
Pour in the coconut milk (or water), bring to a simmer, and cook for 10–12 minutes until the potatoes are nearly tender.
Add chopped cauliflower leaves and cook for another 5–7 minutes until wilted and tender.
Season with salt and garnish with fresh coriander if you like.
