BAKED PEACHES (OR PEARS) WITH YOGHURT, HONEY& PISTACHIOS

WHAT’S IN IT:
4 ripe peaches (or pears), halved and stone removed
juice of 2 large oranges
1 tbsp honey
150g Greek yoghurt (use dairy free if preferred)
1 tsp vanilla extract
20g pistachios, chopped

SERVES 4

HOW TO:
Preheat oven to 200°C/400˚F.
Place the peach halves flat side up in a roasting tin. Pour the orange juice around them and then drizzle the flat side of each peach (or pear) with honey.
Bake for 10-15 minutes, until softened.

Meanwhile, mix the yoghurt and vanilla extract in a bowl.
Divide the peach halves between four serving bowls. Add the yoghurt and top with pistachios.

Store any leftovers in an airtight container and refrigerate for up to 2 days.

THE IMPORTANCE OF DIETARY FIBRE

Fibre is more important than you think, and eating enough of it comes with a lot of added health benefits. Although we all seem to agree that fibre is a healthy addition to any diet, the issue is that most of us don’t know what it is, where to get it, and how much to eat.

“Nearly 12 months ago, I decided to step out of my comfort zone and start training with James at —and it’s been one of the best decisions of my life.

‘I’ve been training with James for over a year now and the results have been amazing. When I started I was dealing with a chronic back injury from years of playing rugby. Thanks to James expert guidance and tailored approach I am now completely pain free for the first time in almost 10 years !
