One Pan Chicken & Veggies Dinner - full recipe below
This is my go-to when I want something healthy without spending an hour in the kitchen
• Marinate chicken overnight (or 30 min minimum) with olive oil + salt, pepper, garlic powder, onion powder, Italian seasoning
• Line a baking pan with your veggies (fresh or frozen both work)
• Place raw chicken on top
• Season chicken broth with the same spices, bring to a boil, then pour into pan
• Bake at 400°F in the oven for 40 min
• Pour excess broth over your plate when serving - it’s basically a built-in sauce
Fast. Easy. Actually filling.
